The Sweet Science of Chocolate

$32 – $35At the Royal Botanic Gardens Sydney, as part of the Sweet Addiction exhibition, at this adults-only event in the Calyx you can meet chocolate scientists and botanists, and sample single-origin artisanal chocolate from around the world.
Enjoy engaging presentations by special guests Galit Segev and David Guest that explore the fascinating story of chocolate and the future of this popular food.
Discover more about the process of cocoa production from Professor David Guest, Faculty of Agriculture and Environment, University of Sydney. There are growing environmental and economic pressures on the chocolate industry, and his work is focused towards finding solutions for making chocolate farming more sustainable in the long term.
Galit Segev, Food Scientist and Chef, will then take you on ‘the journey of the bean’ – tracing how the cocoa bean is transformed from a bitter seed into the delicious chocolate we eat. She will give a chocolate cooking demonstration and tasting session.
All tickets include entry to the Calyx, a glass of wine on arrival, and chocolate tasting.
